G-O-B's BBQ Stew (AKA Brunswick Stew)

Thats a big bowl of “AWESOMENESS”

I cook a heck of a lot and theres only the two of us...so of course I have left overs. Here is 2 lbs smoked chicken, 2 lbs Smoked Brisket and 2 lbs pulled pork that you need to cube into bite size chunks

get a VERY big pan (this is a chicken fryer like 14" across and 6" deep and it wasnt big enough) and hit it with about 1 1/2 sticks butter and simmer til just about browned for that nutty flavor

take two big sweet onions and cut them into nice size chunks along with 2 big jalapenos and 8 (yes 8) cloves of garlic crushed

Add the onions and jalapenos and simmer about 15 minutes until translucent

when just about there toss in two sweet potatoes cubed about 1/2"

stir in all the seasonings and simmer another 15 minutes

Add the meat then add the chicken stock and tomatoes, BBQ sauce and everything else

when everything but the veggies are in and getting "happy-happy"...think about the size of your pot as you have a lot of veggies still to go in it.

Even though it was a big pot...its a HUGE batch so I split it in half and added the veggies to each evenly. turn low and let simmer about 45 minutes to an hour uncovered and rest.

You are seriously going to want this. Get a cast iron pan and make some corn bread to go with it, mine is a cilantor-jalapeno thats crazy good (different recipe)
