G.O.B's Mac & Cheese Chicken bomb...these are the "bomb"


Ok bitches...here we go again. I had some left over pumpkins left over from Halloween decorations...so...I said

Ok, this is yet another one of my buzzed brain farts that is crazy good. First take a big chicken thigh (bigger the better, you know the ones) remove the skin and debone it, cut it so it lays flat and place it on top of two X's of bacon (you'll see why in a minute) and I like to put a slice of roasted pepper on it like so.



Spray up a sheet of foil or parchment (I like foil here, parchment later) and place them cut face down and bake'm at 350 for 45 to 60 minutes until they look all screwed up and soft, you'll know when ya see'm and touch'm

little hint if you plan on making these again (which you will) I like to make a nice size batch of real gooey Mac & cheese with some diced red pepper and jalapeno in it, put about 1 1/4 to 1 1/2 cups of mac & cheese in zip-locks like so and freeze them, that way all ya do is open it, cut it in half as half is perfect for one of these and being frozen its super simple to work into the ball.





place the Mac & cheese on the pepper, remember, best if mostly still frozen at least for this part





Squeeze'm til ya get most of the juice out, they have some just use your own judgement

fold the first X of bacon around like so then duplicate with the second and stick a tooth pic or skewer in the top to secure.



Once ya squeezed it all get one cup full and set aside for the cake batter and the other 1/2 to 3/4 cup left is for the cream cheese.

Now smoke the at between 257 to 300 until the IT is 145-150 and remove and rest about 15 minutes



Take a cup of pecans (or what ever damn nuts you want...and no, not those nuts either) and bake'm at 350 degrees for 8 to 10 minutes until they brown a bit and ya can smell'm

and this little ball of OMG gooooood is whatcha got. Enjoy
