Smoked cheesy stuffed cauliflower


Ok bitches...here we go again. I had some left over pumpkins left over from Halloween decorations...so...I said

Get a large head of Cauliflower and clean out the inside of all leaves and small pieces of cauliflower to open the cavities...may have to trim some stems a bit to get them nice and wide to allow all the cheesy goodness in.



Spray up a sheet of foil or parchment (I like foil here, parchment later) and place them cut face down and bake'm at 350 for 45 to 60 minutes until they look all screwed up and soft, you'll know when ya see'm and touch'm

Steam is for about 7 to 10 minutes, remove from steam and set in a bowl to cool for a few minutes, you don't want to try handling this...its hot as heck



once they are all screwy take'm out and let them cool then scrape all the meat out of'm

Once its some what workable but still hot take a stick of room temp butter and coat every inch of it, like so.



Getcha some cheese cloth and ball it up in it

Next take the parm cheese and panko mix and coat it good, best to do this over the same bowl it was sitting in...just make sure the bowl is dry first...ya, that can be a mess


Squeeze'm til ya get most of the juice out, they have some just use your own judgement

take a small bunch of basil (tbsp and a half or so) and about a tbsp worth of Oregano and rosemary (I happen to have this crap in the back yard...lol)


Once ya squeezed it all get one cup full and set aside for the cake batter and the other 1/2 to 3/4 cup left is for the cream cheese.

dice the herbs up well with one jalapeno but you only need about 1/3 of it for this, the other 2/3 can go into cornbread (that's another recipe)


Take a cup of pecans (or what ever damn nuts you want...and no, not those nuts either) and bake'm at 350 degrees for 8 to 10 minutes until they brown a bit and ya can smell'm

Take about 3 tbsp butter and melt it in a pot



Now, take the mixer and throw in one 8oz brick of REAL cream cheese, not the pussy low fat crap, 3/4 teaspoon of pumpkin spice (ground cloves, ground ginger, cinnamon) and that 3/4 cup of pumpkin that was left in the bowl

take the Jalapenu and toss it in and simmer about a minute (more it cooks the more heat it loses)



add a 1/4 cup brown sugar

Now add about 3 tbsp sour cream and stir it in good


mix well and hard...should be a bit

Now add 1 1/2 cups cheese and 1/2 cup milk and mix up good.


Back to the nuts, now that they are all toasty...chop'm up good so they are still chunky

Now lower the heat to medium and stir in the herbs and the 2 tbsp seasoning, I use my own Cajun mix as I think it works well and a bit of a bite



add them to the mix and just fold them in...no need to mix'm

Now stir it up good, consistency should be like this.

now take 4 eggs at room temp (easier to fluff up), one cup of sugar, 1/2 teaspoon of vanilla and whip it on high for about 3 to 4 minutes until fluffy, add the cup of pumpkin and 1 1/2 teaspoons of the same pumpkin spice mix and mix to just mix it in so you dont lose your fluffy

If it got a bit too hot and thinned out than it up.t's ok, just add about 1/2 cup more cheese while off the heat to tighten it up


Once mixed in good take a 12

My favorite toy in my arsenal is my battery operated cookie press, this thing has Sooooo many uses, I had one of these nozzles that do the lined icing decorations that i trimmed the tip off of, I fill it with the cheese mix and inject it into the cavities until you see it pushing out of the others


Spread it with one of these things...or one of those cake slice things or just use a damn big spoon...just make sure its even and when yer done grab it by the sides and SLAP it down a couple times to make sure its even

And do this to every cavity til it blobs out the top


Throw the bitch in the oven at 375 degrees for about 15 minutes until its golden and if ya touch your finger onto the top and lift it puffs back up

You want it full almost to the top because as it smokes some of the mix will settle even more into the cavities



This is whatcha should have

Set it in the smoker (or grill or even oven if you don't have a grill or just don't want it smoked) and set to 250 degrees for about 1 hour or until a butter knife slides in the side with little resistance



Now the fun part, take confectionery sugar and sift it on top, some idiots do this to the towel then flip it on the towel which is the makings for a disaster, not me...this is WAY easier

After a good hour or so (some grills vary and could be 1 1/2 hours) this...is what you will have


Once sugared like this grab a clean kitchen towel.
  1. Now let stand tented for about 20 minutes under foil and lice when ready to eat, I find cutting about 1" thick is best "Enjoy)"
