
“Ultimate Cheesy Cauliflower casserole”

Break up and steam two heads of Cauliflower until done but still firm about 15 minutes


melt 4 tbsp butter and whisk in a 1/4 cup flower

Whisk it up on medium high until smooth and bubbly

stir in 2 cups of milk and whisk until it starts to thicken

use 3 to 6 cloves of garlic smashed, diced and then smushed by pressing on the back of the blade while pulling across the garlic making it a smooth paste

dice up one large yellow onion and saute it in 4 tbsp butter until translucent, saute in the garlic and add to the mix

stir in 2 cups of shredded cheddar cheese (or the four cheese mix which I always use) until melted and smooth

Pour the mix lightly and evenly over the cauliflower just enough to barely cover them, not all puddled up in it.
